Pickled Cucumbers and OnionsIngredients 2 cups sliced cucumbers 2 cups sliced onions 3 oz Sugar 2 cups rice vinegar 1 t minced garlic Salt and pepper to taste Directions Slice 1 cup of cucumbers Slice 1 medium onion (1 cup) Add sugar, salt, pepper and garlic to rice vinegar Stir until dissolved Pour mixture over cucumbers and onions If liquid does not cover cucumbers and onions, add more rice vinegar until covered Place in refrigerator for 2 hours or more, stirring after one hour Yield 2+ cups NOTE If you prefer, eliminate either cucumbers or onions, doubling the remaining vegetable Return to the Fullbean Recipes Main Page
